...comfort food...{Cheesy Beefy Casserole}

Yes, I know it's the end of May...not traditionally the time of year for "comfort food"...however, it was around 50° here yesterday and I was cold...and hungry...and I had all of these ingredients in the house...

My Mom's Cheesy Beefy Casserole (the name probably leaves a lot to be desired...but it is descriptive...)


1 lb. ground beef, browned & drained - seasoned with Garlic Salt, to taste*
1 lb. macaroni noodles, cooked*
1 can tomato SOUP
8 pieces American Cheese

Here you go...easy peasy...

Mix the beef, noodles & soup together in a large pot. Put one layer of the meat mixture in the bottom of a 2 quart casserole dish, top with 4 pieces of the cheese (lay them out in a four-square pattern...don't just pile all 4 on top of each other...yuck). Then do another layer of the meat mixture & 4 more pieces of cheese (if you need to do another layer, go ahead, just make sure you end with cheese on top).

Pop it in a 300° oven for about 1/2 hour or until the whole thing is warm and the cheese has melted.

Serve to your family and sit back and smile, because lady, you rock.



We always ate this with corn & carrot sticks...yum. And, like most casseroles...this always tastes better the 2nd day...

*You can probably substitute whole grain macaroni & turkey for the ground beef...but if you're gonna do it, why not just do it???
